BOUQUET NOUVEAU Organic Edoardo Miroglio

The interest in organic products increases every year. The bio-market also follows this trend very seriously, both globally and in Bulgaria.

Edoardo Miroglio wine cellar in the village of Elenovo is one of the largest producers of organic wines in Bulgaria. In order for a wine to have proven bio production, there are many requirements with the main ones being: the vineyards must be fertilized only with manure, digging is done by hand in order to preserve the most important soil fauna, while removing the weeds. No herbicides and pesticides are used.

Following all these requirements, from 2012 the cellar produces the organic wine Bouquet Nouveau, which is made from one of the most interesting Bulgarian varieties - bouquet. Created in 1951, this variety, unlike the suggestion of its name for a collection of aromatic flowers, is not the Bulgarian version of the cuvée of all varieties in the vineyard. It was created by the method of sexual hybridization by crossing Mavrud and Pinot Noir from a team of Bulgarian professional.

Bouquet Nouveau is produced using the "Beaujolais Nouveau" technology with a carbonaceous maceration. Typical of these wines is that the fermentation is carried out on a whole grape (not pressed). Grape grains are filled into the container where they are left to start the fermentation. In this process the nipples burst and the juice is collected at the bottom of the vessel. It takes about 12 to 15 days. The wine is drained, sown for apple-lactic acid fermentation, then stabilized, filtered and bottled immediately to consume very young and fruity. As a result of the carbonaceous maceration, the wine has a pronounced fruity character, a light and elegant taste.

Bouquet Nouveau has a ruby-red color with purple glow, a fresh fruit bouquet of aromas (as the name suggests), red and black berries, with a charming, playful freshness and a slightly floral finish with a memory of violets, wildflowers and fruit in aftertaste. Sweet and pleasant wine for every day, suitable for almost any dish, but best combined with pasta, pizza, meals with lean meats and yellow cheeses. It is advisable to serve slightly chilled (13 C).
